who doesn't love pumpkin flavoured .. well anything around fall? if you're counting your calories or watching what you eat, sometimes it's really difficult to find snacks that aren't crazy in the fats and calories. this recipe is amazing to have at thanksgiving or if there's company coming over, or anytime at all.
14 oz can of Pure Pumpkin
3/4 cup brown sugar ( i used President's Choice Brown Sugar substitute or stevia is fine)
1 tsp vanilla
1 tsp cinnamon
pumpkin pie spice
3/4 cup fat free greek yogurt
1 cup low fat or fat free cool whip
mix the can of pumpkin with the brown sugar in a medium sized mixing bowl. add the vanilla, cinnamon and pumpkin pie spice, mix well. add the greek yogurt until blended. lastly, FOLD in the cool whip so it becomes airy, and light. keep refrigerated.
- serve with any kind of fruits (apples, bananas, etc) or cookies (graham wafers, digestive cookies, etc)
only about 130 calories per half cup.
